DeTouch
I know we go on about retouching of pictures quite often but it's a subject I'm fascinated with so you can imagine how impressed I was with DeTouch - a project which highlights the changes made to images. The simplest way to describe it is to dive in and have a play with the java applet (might take a short while to load up) and do bear in mind that there are multiple images per section so you've got a huge amount to play with.
